Malai Boti Paratha Roll 
MALAI BOTI:
  • Chicken boneless cubes           ½ kg
  • Yogurt                                                 2 tbsp
  • Ginger & garlic paste                   1 & ½ tbs
  • Hari mirch (Green chili) paste    1 & ½ tbs
  • Cream                                                2 & ½ tbsp
  • Namak (Salt)                                1 tsp or to taste
  • Cumin seeds roasted & crushed 1 tsp
  • Black pepper powder                1 & ½ tsp
  • Cooking oil                                    2 tbs
  • Koyla (Charcoal) for smoke
PARATHA:
  • Maida (All-purpose flour)     2 cups
  • Namak (Salt)                       ½ tsp or to taste
  • Cooking oil                         2 tbs
  • Water as required
SPICY MAYO GARLIC SAUCE:
  • Mayonnaise                       1 Cup
  • Dairy cream                       3 tbsp
  • Namak (Salt)                     ½ tsp/                                      or to taste
  • Garlic powder                1&½ tsp
  • Red chili powder           1 tsp
  • Sugar                              ½ tbsp
  • Doodh (Milk)                 1 tbsp
  • Black pepper crushed 1 tsp

MALAI BOTI

  • Put chicken boneless cubes in a bowl and add yogurt, red chili powder, salt, black pepper, cumin powder, garlic paste, ginger paste, oil and cream.
  • Mix well and set the mixture aside for at least 2 hour to marinate.
  • Take a pan and Add oil.
  • Add marinated chicken mixture and fry.
  • Cover and cook for 15-20 minutes until chicken is done.
  • Thereafter cook on high flame until water evaporates and oil separates.
  • Give a coal smoke for 3 minutes.

PREPARE GARLIC MAYO SAUCE:

In a bowl, add mayonnaise, cream, salt, sugar, garlic powder, red chili powder, milk and mix well

ASSEMBLING INGREDIENTS:

  • Paratha
  • Prepared Spicy Mayo Garlic sauce
  • Prepared chicken malai boti
  • Pyaz (Onion) sliced

Assembling:

On paratha, add prepared Garlic mayo sauce, chicken malai boti, onion, fold to make a roll, wrap in butter paper & serve.
