Flames n Flavours – Coconut Curry

Coconut Curry:
  • Pani (Water) 3 Cups or as required 
  • Coconut milk powder 50 gms (1 packet) 
  • Chicken boneless cubes ½ kg 
  • Hari mirch (Green chilies) whole 5-6 
  • Lehsan paste (Garlic paste) 1 & ½ tsp 
  • Adrak paste (Ginger paste) 1 tsp 
  • Dhania powder (Coriander powder) 2 tsp 
  • Kali mirch (Black pepper) crushed 1 tsp 
  • Namak (Salt) 1 tsp or to taste 
  • Lal mirch (Red chili) crushed 1 & ½ tsp or to taste 
  • Peanut butter 1 & ½ tbs 
  • Oil ½ Cup 
  • Cream 3-4 tbs 
  • Hara dhania (Fresh coriander) chopped 
  • Adrak (Ginger) julienne 
  •  
Garlic Herb Rice::
  • Oil 1 tbs
  • Makhan (Butter) 2-3 tbs 
  • Lehsan (Garlic) chopped 1 & ½ tbs 
  • Chawal (Rice) 1 & ½ Cups (soaked & boiled until ¾ th done) 
  • Mixed herbs ½ tbs -Pani (Water) 2-3 tbs

 

Coconut Curry :
  • Add water, coconut milk powder in a bowl / pot and whisk well.
  • Add chicken boneless cubes and mix well.
  • Add green chilies, garlic paste, ginger paste and mix well.
  • Switch on the flame and bring it to boil.
  • Cover and cook on medium flame until chicken is tender.
  • Add coriander powder, black pepper, crushed salt, red chili crushed and mix well.
  • Cook for 2-3 minutes and then add peanut butter and mix well.
  • Add oil and cook until oil separates.
  • Turn off the flame, add cream and mix well.
  • After mixing the cream, Turn on the flame and cook for 2-3 minutes.
  • Add fresh coriander, ginger, green chilies & serve. 
Garlic Herb Rice:
  • Add oil and butter in a bowl / pot and let it melt.
  • Add garlic and mix well.
  • Add rice and give it a good mix.
  • Add mixed herbs and mix well.
  • Sprinkle water and simmer on low flame for 5 minutes.
